250g dried broad beans
300 ml water
3 cloves of garlic whole (1)
2 bay leave
1 long green chili whole
30 ml olive oil
1 bunch of chicory
3 cloves of garlic chopped (2)
1/2 long red chili chopped
100 ml olive oil
Salt
Black pepper

Soak the broad beans in cold water overnight
The next day peel the tough skin of the broad beans. Discard the skins.
Turn your oven on 150 degrees.
Put the broad beans together with the water, whole chili (1), whole garlic cloves (2), the bay leaves and the 30 ml of olive oil into a dish. All the ingredients need to be submerged in the water.
Cover the dish with a lid or Alu foil and put it in the oven.
Bake the dish for approximately 1 – 1 1/2 hours or until the beans are mushy and falling apart.
While you bake the beans, bring some salted water to the boil and cook the chicory till soft.
Let the chicory cool down and squeeze out all the water with your hands.
Chop the chicory into 1cm pieces.
When the beans are cooked pour the mix into a bowl, take out the chili and bay-leave and discard.
Pour the 100 ml of olive oil into a frying pan, add the chili and garlic and turn on the heat. When the garlic starts to change colour add the chicory and fry until soft and sweet.
Add this mix to the beans and mix everything.
Season with salt and pepper.
Eat with crusty Puglia style bread.
