Tartare di tonno rosso (Bluefin tuna tartare)

Simplicity and flavor at its best: the main ingredient for this recipe is a very fresh bluefin tuna loin.
Our chef Filippo was born in Monterosso – Cinqueterre (Italy) where fish is the main ingredient of many traditional recipes.
Our goal is to celebrate a majestic fish, the “Tonno Rosso”

Preparation time 20 min.

Ingredients for 4 people:
500g of fresh Bluefin Tuna
3 tablespoon of Italian extra-virgin olive oil
1/2 lemon, juiced
1 finger lime
2 cloves of garlic
2 avocados
4 slices of fresh sourdough bread
salt and pepper to taste

Instructions:
Finely dice the bluefin tuna into a 5mm mince and place it into a mixing bowl.
Season the tuna with the extra virgin olive oil, salt, pepper.
Empty the finger lime and add half to the tuna with 1 tablespoon of lemon juice. Mix nicely and rest in the fridge until service.
Mash the avocados into a spread, season it with salt and pepper and the remaining lemon juice. Leave at room temperature covered with a lid.
On a hot steak pan, grill the sourdough slices (don’t burn them too much) and rub the clove of garlic onto the warm bread.
With the help of a round cookie cutter or egg ring, cut a disc of bread, place it on a serving plate.
Starting with the bread, follow with a layer of the avocado spread and finally the diced tuna.
Drizzle some extra virgin olive oil and some of the finger-lime “pearls” to garnish.
