Ragu Di Carne

This dish has become famous with all our customers. It is used in our spaghetti bolognese ragu and lasagne. Both dishes are the most popular dishes of our restaurant. We also sell over 100 trays of lasagna to the families every week.

Ingredients
2 carrots
2 brown onion
1/2 celery
600ml red wine
800g peeled tomatoes
500g diced chuck beef
200g beef mince

Instructions
1. Clean and peel onions, carrots and celery.
2. Dice all and prepare a “soffritto.”
3. Put all vegetables in a pot to boil.
4. Once all vegetables are cooked, put diced beef into pot.
5. Stir and lightly season with salt, pepper and rosemary.
6. Add the red wine and simmer on low.
7. Once the meat is cooked and soft, add the peeled tomatoes.
8. Once the tomatoes are soft, add the mince.
9. Stir well.
10. Simmer the sauce for approx. 2 hours.
11. Serve with cooked pasta such as spaghetti, fettucine, or papardelle.
Garnish with fresh basil and cheese.
